RECIPE | Garlic Prawn & Cherry Tomato Spaghetti


Ingredients

• 500g peeled raw prawns 
• 1/3 cup unsalted butter (melted)
• 3/4 cup milk
• 1 cup chopped parsley
• 3 cloves garlic (crushed) 
• 1/2 cup chicken stock (or vegetable stock)
• 1 punnet cherry tomatoes (halved)
• half packet of long spaghetti 

Method:

1. Cook spaghetti according to packet instructions. Once done, rinse with cold water & set aside. 

2. Add 1tbsp Virgin oil + garlic to pan on medium-high heat. Put the prawns in for 3 minutes or until they've turned a pinky red colour. Pull them out of the pan onto a plate with tongs. 

3. Add the stock into the pan for 2-3 minutes or until reduced. Stir together the milk and butter then pour them over the stock and let them reduce for around 6-7 minutes. (Keep in mind you could use thickened cream instead of the milk & butter but that's what I had and it tasted even nicer) 

4. Add the tomatoes & parsley - stir gently 

5. Put the prawns back into the sauce 

6. Pour boiling water over the spaghetti until warm then slowly add them into the sauce and fold through gently until fully combined. 

7. Garnish with fresh coriander or parsley.

RECIPE | Roasted Pumpkin & Beetroot Salad!


Such a simple salad perfect for the spring season with all its gorgeous colours. Here it goes:

Ingredients:

• Pumpkin (peeled & roasted) 
• beetroot (cubed)
• kalamata olives (halved)
• feta cheese (crumbed)
• sundried tomatoes (slices)
• rocket leaves 
• halved almond (toasted)

DRESSING:
• 1tbsp balsalmic vinegar
• half a lemon
• 1tbsp olive oil

METHOD: 

Lay the rocket out and place all the veggies on top. Put the feta delicately over the veggies and top with toasted almonds. Drizzle with the dressing and viola! DONE. 

Don't mix the salad! It's best served as is and also try to serve the almond warm over the top.

RECIPE | Thai Prawn Fried Rice


Ingredients: 

• 300g raw prawns
• 100g snow peas
• 1 can baby corn
• 1 can bean sprouts/shoots
• 2 tbsp Sweet chilli sauce 
• 2 tbsp Fish sauce 
• 1/4 cup fresh corriander (chopped)
• 1 lemongrass stick - white soft part only (finely chopped)
• 2 garlics (finely chopped)
• 1 1/2 cups Jasmine rice (cooked)

OPTIONAL: 1 red chilli (to garnish) - sliced

Method:

1. Cooked prawns in a large pan/wok with 1tbsp of olive oil until pink. 

2. Remove prawns to a plate and add another 1 tbsp of oil to the pan. Add garlic, lemongrass & snows peas and cook for 2 minutes or until peas are soft. 

3. Add the rice and stir until rice is well coated with the oil. 

4. Add the rest of the ingredients and stir until combined and corn in warm. 

5. Garnish with red chilli 

Done! 

My husband and I absolutely loved this dish and I'm sure you will too. If you're not a fan of spicy foods then leave out the red chilli. Otherwise enjoy your new favourite Thai dish in the comfort of your own home!

ORGANISATION - Pantry

Organise Pantry [✔️] .

Finally had the opportunity to organise my pantry this morning.



So here are my top tips for pantry organisation

🔸Section off your pantry according to product type (i.e. Sauces, snacks, baking, herbs/spices, breakfast stuff etc)

🔸Label EVERyTHING! You may think you know what it is but just label it (looks pretty anyway☺️) - I may as well carry my DYMO labeller in my handbag.. That's how much I use it!

🔸If you purchase something with little product and big packaging just pour the product into a jar (reject shop) a size that will suit the amount of product and label what it is. This will help you save so much space. NOTE: don't forget to write the expiry date to!


🔸Always keep a stepping stool in your pantry for handy access. You never know when you need that bad boy! Especially when you're in a rush.

🔸If you have a walk in pantry like mine with plenty of room, use it to store your bigger cast iron pots & electrical appliances i.e. Rice cooker, food processor, juicer etc - it helps save space in your kitchen cupboards! 



🔸Keep a book stand in your pantry with your favourite recipe of the week & make it your GOAL to make that recipe. Every Time you open your pantry it will remind you to make it!



🔸Buy pantry steppers (as seen in my third shelf) - these are a definite 'must-have' to ensure you can see all your jars and you won't end up with triples of each sauce. 


🔸 Don't over crowd shelves. Keep them minimal with products in order to be able to see everything on each shelf.

INDIAN CUISINE

My first time cooking Indian food was definitely a success. I decided to create a yummy 'lamb & Chick Pea Curry' with steamed basmati rice, freshly fried papadums & organic Greek yoghurt.

EID MUBARAK!

EID Mubarak to all my lovely followers! I truly hope this EID was a happy & blessed one for you all. I'm trying my best to get back into regularly posting on my blog, so please be patient with me ☺️

I went for a subtle look using a light khaki green & neutral beiges as my base colours. I put the look together by adding minimal gold accessories for an overal trendy chic look.

Here is my EID day #2 outfit


This was my favourite look this EID. It was a moroccan/bohemian/Arabian inspired outfit which provided me with both an aesthetically pleasing look & ofcoursr comfort (most importantly). I went with the same hijab & heels from day #1 (recycled😝) & wore this gorgeous purple fully zipper dress! #LOVE! Oh yeah.. and I added more gold accessories to add to the whole 'Moroccan' vibe.

Ramadan/Laylutal Kadr DUA


I've been trying to find a DUA to read every night during the last 10 days of Ramadan. I finally found a beautiful one online. It's quite long but covers everything that's meaningful to us in this life & the next. Please take the time to read it ALL & share it for all to see and use. O Allah, O Karim, 
Please have Mercy on me. 
O Allah, O Karim, 
Please forgive me 
for the sins I committed in the past 
and those I will commit in the future. 
 
O Allah, 
have Mercy on all the Muslimeen, 
and guide them. 
Guide me O Allah, 
and guide my parents, 
my siblings, my cousins, 
my aunts and uncles, 
my nephews and nieces and so forth. 
 
O Allah, 
I ask You 
to strengthen my iman and those around me. 
I ask You to soften my heart 
and to soften the hearts of the Believers. 
 
O Allah, 
forgive me for my shortcomings, 
for only You are Perfect. 
 
O Allah, 
Please Forgive me 
if I ever got too wrapped in a matter 
that I didn't have the time to utter Your Name.

Please be the Light of my eyes, ears and heart.

for any backbiting I have been accused of,

help the suffering Muslims

Please O Allah, make the Mujahideen victorious, 
and let the beauty of Islam reign!

of Your Deen and this world. 
 
Oh Allah, Please Help us all and guide us,
